Cranberry Sauce
Cranberry Sauce is really easy to make. Feel free to experiment with sugar substitutes. You can use more or less coconut sugar, depending on how low-glycemic you want to go. I have also made versions using just stevia, and they taste just wonderful.
If you need to control sugar intake, just use stevia.

- 12 ounce(s) bag fresh organic cranberries
- 1/4 cup(s) to 1/2 cup coconut sugar, Xylitol or a bit or stevia
- 1 cup(s) water (part of it may be replaced with juice of one orange)
- 1 grated zest of one orange
Cranberry Sauce Directions
- Put cranberries in a pot on the stove, and pick through to remove soft and/or brown ones.
- Add the rest of the ingredients, stir, and bring to a boil on medium-high heat.
- Stir frequently. The cranberries will pop, and then release their "gel" -- and the sauce will come together like magic.
- Cook until the sauce is the consistency you want, about 5 to 10 minutes.
