Quick & easy chicken recipe, using store cupboard ingredients. By adding a little sweetness and crunch, it gives some texture and flavour to what can often be a dry and tasteless protein source.

- 6 whole Large skinless chicken breasts
- 10 whole dried (dark) apricots
- 1/2 cup(s) boiling water
- 1/2 cup(s) hazlenuts
- 1 tablespoon(s) Dijon mustard
- 1 teaspoon(s) Coconut aminos
- 1 teaspoon(s) Garlic clove (small)
- 1 teaspoon(s) Sunflower butter
- 1 tablespoon(s) Extra virgin olive oil
Hazlenut & apricot chicken Directions
- Remove chicken from fridge to allow to come up to room temperature slightly. Pre-heat oven to 180*C
- Pour boiling water over apricots and leave to steep.
- spread hazlenuts out on a tray and roast in the oven for 8-10 mins.
- Combine all ingredients (including nuts and apricots) in a food processor and blend until combined. The nuts may still be chunky – but that‘s nice!
- Lay out chicken breasts on a silicone sheet or a greased foil lined baking tray. Divide mixture across the 6 fillets and spread out to cover the tops with the back of a spoon.
- Bake for 25 – 30 mins – check inside is cooked (white meat not pink)
