Grain-free Pumpkin Porridge

- 1/2 cup(s) pumpkin (canned or freshly cooked)
- 1 tablespoon(s) tahini (raw or roasted)
- 1/4 cup(s) warm filtered water
- 1/4 teaspoon(s) vanilla extract
- 1/4 teaspoon(s) ground cinnamon
- 1 tablespoon(s) shredded coconut
- 1 tablespoon(s) raisins (optional)
- 1 tablespoon(s) honey or maple syrup (optional)
Grain-free Pumpkin Porridge Directions
- Combine ingredients in a small mixing bowl.
- Transfer mixture to a saucepan
- Heat mixture over a low flame. Stir frequently to warm the mixture throughout. For highest health benefit, do not boil the mixture.
- Variations: Stir in a raw egg for protein. (This works best if your mixture is not so hot that it cooks the egg instantly). Stir in a healthy oil, such as coconut, hemp, or macadamia. Stir in a tablespoon of high-quality protein powder (again, this works best if the mixture is just barely warm). Also, you can remove the raisins and honey if you want to make it less sweet.
