Crispy Zucchini

I really love to eat anything that is crispy and salty, so I’m always looking for ways to have more of that in my diet.  I can do that by baking the little zucchinis at a high temperature to the point of almost being burnt… Yum! 

 

I generally make this for dinner, but it can certainly be made for breakfast too.

 

Zucchini gets a bad reputation because there’s such an over abundance of it in the summer time.  But the fact is those zucchinis are grown in your garden or your friends’ garden, and that is about as local as you can get.  So grab those zucchinis that are offered to you and bake ‘em, sauté em, and fry ‘em up in healthy fats!

  • Italian seasonings
  • 3 small zucchini
  • 1 tablespoon(s) butter
  • 1 teaspoon(s) salt (or more to taste)
  • pepper
  • garlic powder
  • onion powder

Crispy Zucchini Directions

  1. Preheat the oven to 450 F degrees.
  2. Put butter in a large, shallow pan and set in the oven to warm.
  3. Slice zucchini very thin.
  4. Take pan from the oven.  Add the sliced zucchini and carefully stir the zucchini in the melted butter.  If there’s not enough butter to coat all of the zucchini, add more butter and set pan in the oven to melt the butter.  Take the pan from the oven and stir to coat all zucchini in butter.
  5. Add seasonings to taste: sprinkle the seasonings on the zucchini, stir, and then taste one.  Add more of whatever you think it needs.  This is a practice at which you will get better the more you cook.
  6. Spread the zucchini in a thin layer across the pan and put it in the oven.  
  7. Allow zucchini to cook about 10 minutes and then start to check it about every 5-7 minutes.  Each time you check the zucchini, take the pan from the oven and stir the zucchini, tasting one and adjusting the seasoning.
  8. The zucchini will cook to a point of being soft, you could stop here and eat if you prefer your zucchini soft.  Or return the pan to the oven to keep cooking until the zucchini gets to the crispy phase.  At this point, you can take them out or put them back in the oven for a few more minutes.  Check every few minutes at this point.  You can lower the temp of the oven to 350 degrees to prevent some of the zucchinis from getting too crispy (or burnt!).
