Coconut Bars (with Variations)
Simple, slightly chewy bars for coconut lovers. Great for kids' lunch boxes.
The base recipe is just coconut, eggs & salt. To this base you can add whatever you want of "seasoning" and "chunks." Good combinations of the two are:
Vanilla extract and mini chocolate chips (decadent).
Ground cardamom and raisins.
Curry seasoning and golden raisins.
Orange zest and dried cranberries.
Use your imagination!

Recipe
- 2 eggs
- 1 pinch(es) fine sea salt (to taste)
- 2 cup(s) unsweetened shredded coconut
- 1 teaspoon(s) seasoning (to taste)
- 1/2 cup(s) chunks (to taste)
Coconut Bars (with Variations) Directions
- Preheat oven to 350 degrees. Grease a 9x9 pan with coconut oil.
- Whisk egg, salt and "seasoning" (can be vanilla, cardamom, curry, lemon zest... whatever your imagination wants to try) together.
- Add coconut, mix well, and cover bowl with a plate. Let sit while oven heats up. This allows coconut some time to absorb moisture from eggs.
- Mix in desired "chunks." Can be mini chocolate chips (recommend the Enjoy Life brand), raisins, golden raisins or other dried fruit. Again, there is room for imagination.
- Press coconut mixture into pan. Bake for 20 minutes or until starting to turn golden.
- Let cool, cut into squares and enjoy!
